An Earl Grey ‘cloud’ combines jasmine sponge with aromatic Earl Grey, passion fruit confit, and smooth vanilla custard, offering an uplifting yet balanced tea-led profile. The peach éclair pairs fresh peach gel with soft ricotta cream for a light, refreshing bite, while the vanilla cloud dome features clear jelly, vanilla pain de gêne, vanilla croustillant, vanilla ganache and crémeux, delivering a comforting, cloud-like indulgence. A delicate jasmine and coconut verrine layers coconut gel, raspberry croustillant, jasmineinfused ganache, and coconut sponge for a softly floral finish. Freshness continues with a wild berries’ choux, filled with wild berries and balsamic preserves and finished with mint crémeux, balancing sweetness with herbal lift. Warmer, grounding notes come through in the orange and cinnamon hot air balloon, combining orange confit, orange crémeux, cinnamon ganache, walnut streusel, and cinnamon sponge. The selection concludes with a hibiscus macaron, adding a final floral touch with subtle tartness and vibrant color.
